Our Artisan Blue Label is reserved only for the finest and most rare Wagyu available. The Blue label is only given to Wagyu that scores at the very top of the marbling scale, far above USDA Prime, and derived from only Full Blood Wagyu animals. These have very limited availability and offer a luxury experience for those desiring the very best of pure Wagyu, without any crossbreed genetics creating different flavor profiles.
The teres major, also known as "petite tender" or "mock tender," is a lesser-known but highly prized cut of beef, prized for its tenderness and flavor. This muscle is located near the shoulder blade and is often compared to filet mignon in texture, though it comes at a more affordable price.
